Breakfast For Dinner

Last night we had breakfast for dinner.  Blueberry whole wheat waffles & raspberry ones too.  We all love them, especially our daughter who will eat anything with raspberries!  It’s fun to have breakfast in the evening for a change.  Besides, it’s one of the meals Daddy knows how to make so he’s happy contributing & I’m happy not cooking.  As an added bonus, younger kids can help with pouring and mixing which is always a treat for them.

As a stay-at-home Mom with a baby who sleeps very little & an energetic toddler, it’s tough to get a meal on the table sometimes.  Plus, “mom-brain” gets in the way of coming up with wholesome new ideas.  Sometimes I feel as though I’m stuck in a rut of foods.  We try to eat fresh, in-season foods we can find locally.  Currently we are in the dead of winter & it can be a challenge to think up ideas.

  Now that my baby is nearing one year, I hoping to cook a variety of foods more often.  I will be posting dinner suggestions once in a while because I know others of you reading are in the same boat.  Please feel free to share your favorite healthy meal recipes by leaving a comment below this or any future mealtime post.  Thank you!

  1. Saw the most amazing meal fixed by Paula Dean yesterday! Made me want to go out and get the fixins for it! Not sure how healthy it was, as it’s Paula…but it was meatloaf, onion pie, and carrot bundles that were so cute! You can certainly make any of those healthier in ways. I’ll be making this soon I believe!
